Blueberries and greek yoghurt pancakes

GB Rowing Team chef Marcin Mazur suggests a delicious pancake filling – perfect for Shrove Tuesday or any day you need a lift!
Ingredients

1 cup of raisin flour
1 teaspoon of baking powder
1 tablespoon of lemon juice
1 teaspoon of vanilla sugar
1 tablespoon of brown sugar
3/4 cup of Greek yoghurt
3/4 cup semi-skimmed milk
1 free range egg
Sprinkle of cinnamon
Blueberries or strawberries (or both!)

How to make it
  1. Mix  the yoghurt with the milk, egg, sugar and lemon juice. Then sift the flour and baking powder into the wet ingredients. Mix well and don’t worry too much about the lumps.
  2. Add the berries to the mix and stir gently. When the mix is ready, leave it for about 20 minutes to settle.
  3. Then take a non-stick pan and pour a small amount of oil into the pan. Make sure the oil is hot before you add it into the mix then fry the pancakes until golden brown.
  4. Serve with the sprinkled cinnamon on top and blueberries or strawberries. Add a spoonful of yoghurt on the top as well.
